1. Crunchy Turkey Salad:

When we are in a hurry and don’t have time to savor our food, we usually make a sandwich on the go. But instead of stuffing the turkey and a couple of vegetables between two slices of bread, rustle up this crunchy turkey salad.

How to Make:

  • Season 1 and ¼ pounds of diced smoked turkey breast and season with salt and freshly ground pepper.
  • To this, add 1 cup of chopped scallions, 1 cup of halved seedless grapes, ¾ cup of chopped celery, ½ cup toasted and coarsely chopped almonds, 2 tablespoons of chopped chives, 3 tablespoons of chopped parsley, 1/3 cup of mayonnaise and 2 tablespoons of Dijon mustard.
  • Mix the ingredients well and add 8 ounces of provolone cheese, cut into small cubes.
  • Serve with bread.

Serves: 6 

2. Cajun Turkey Salad:

Red pepper and turkey meat, the turkey breast salad recipe, it doesn’t get better than this!

How to Make:

  • Heat a large wok and toss 2 tablespoons of sesame seeds over high heat until golden.
  • Add 2 tablespoon of groundnut oil to the wok and tip in 500 grams of turkey breast (cut into 2 inch strips).
  • Add Cajun seasoning, 1 large red pepper (de-seeded and sliced) and stir fry for 5 minutes or until the meat is white.
  • Toss the cooked turkey with some herb salad, top it off with some guacamole and serve with tortilla chips.

Here’s an Indian version of the turkey meat salad recipe! The smoked turkey salad!

How to Make:

  • Make the dressing by mixing together ¼ cup mayonnaise, 2 tablespoons of chutney and curry powder to taste.
  • To make it more voluminous, add a little bit of heavy cream and whip together. In a large bowl, combine 1/3 cup of chopped cranberries, 1 tablespoon of chopped green onion, ¼ cup of chopped celery, a handful of pecans and 1 and ½ cup of diced smoked turkey breast.
  • Now stir in the dressing until well combined.
  • Serve as sandwich filling or luncheon salad.

4. Cobb Style Turkey Salad:

This is a personal favorite. Try it and I am sure you’ll love it as much as I do!

How to Make:

  • To make dressing for this salad, whisk together 2 tablespoons of red wine vinegar, ½ teaspoon of Dijon mustard, 1 clove of garlic (minced finely) and a pinch of salt, pepper and granulated sugar each.
  •  To this, add 3 tablespoons of extra virgin olive oil in a thin stream, whisking thoroughly.
  •  For the main ingredients, mix 3 cups of shredded romaine lettuce, 1 cup of torn watercress leaves, 1 large tomato (diced), 1 thinly sliced small sweet red pepper, 1 cubed avocado, 2 hard boiled eggs (sliced), 2 tablespoons of chopped fresh chives and ¼ cup of crumbled blue cheese.
  •  To serve, drizzle the dressing on top and toss.

5. Asian Inspired Turkey Salad:

How to Make:

  • In a bowl, combine juice of 1 clementine and 1 lime with seeds of 1 pomegranate and ½ a red onion, grated.
  •  Add olive oil in a volume equivalent to 3 times the juice already present.
  •  Add 2 tablespoons of dark soy sauce, 2 teaspoons of sesame oil, fresh chilli and ginger and mix well.
  •  For the salad, toss together 2 cups of cooked turkey, 100 grams of cashew nuts, 100 grams of dried cranberries, 2 teaspoons of ground five spices, 1 tablespoon of honey and a handful of fresh mint leaves and cilantro each.
  •  To finish the salad, mix the dressing with the turkey mixture.
  •  Toss the mixture with 4 large handfuls of mixed salad herbs like rocket, spinach etc.
