Healthy Oat Recipes: Oats Lemon Rice


Lemon rice is a famous south Indian delicacy, but we give it a healthy twist by adding a generous helping of oats to it. Oats contains several important nutrients in it that help keep our immune systems strong such as zinc, selenium, calcium, B vitamins, vitamin E, iron, copper, magnesium, and manganese, which are needed for digestion, weight loss and healthy skin and hair.

Serves 4

½ cup oat rice – boiled
1 cup basmati rice – boiled
2-3 tbsp lemon juice
¼ tsp ground turmeric
½ tsp sugar,  salt, or to taste
3 tbsp oil
½ tsp mustard seeds, ½ tsp cumin seeds
4 tbsp yellow split peas (channe ki dal) – soaked for two hours
3 dry, red chillies – broken into pieces, a few curry leaves
Heat oil in a large wok. Reduce heat. Add cumin and mustard seeds. Let them crackle. Add curry leaves and red chillies. 
Add channe ki dal and cook util it becomes dry and soft. Add haldi (turmeric) and salt and sugar.
Run a fork through the boiled basmati rice to separate the rice grains and add boiled oat rice and boiled basmati rice to the dal mixture in the wok. Stir gently to mix well. Serve.
