This is a delightful salad that combines tangy and sweet flavors and makes for a crunchy, delicious snack.

How to Make:

  • Tear 2 small hearts of romaine lettuce into bite size pieces.
  • Peel 2 small kiwis and slice them into ¼ inch thick slices.
  • Take a small orange and slice off the top and bottom. Now carefully cut away the peel and the white, bitter pith with a paring knife. Avoiding the pith, cut wedges of the orange and squeeze the juice of the remaining fruit to reserve.
  • Toss together the kiwis, lettuces and oranges.
  • To make the dressing, combine 1 and ½ tablespoons of olive oil, 3 tablespoons of apple cider, 1 teaspoon of lemon juice, the reserved orange juice, 1 teaspoon of sugar and salt to taste.
  • Whisk the dressing well and drizzle over the fruits.
  • Garnish with mint and slivers of toasted almond.

How to Make:

  • Slice 1 medium sized peeled cucumber into very thin strips.
  • In a bowl, mix 1 tablespoon of rice wine vinegar with 1 tablespoon of white balsamic vinegar and place the cucumber slices in this vinegar mixture.
  • Let the cucumber sit for 20 minutes to marinate.
  • Meanwhile, peel 2 kiwis and slice or dice.
  • Shred some green, red, Boston and romaine lettuces into small bite size pieces.
  • Toss the lettuce with the kiwis.
  • Drizzle the vinegars on top and toss it with the cucumbers and serve.

How to Make:

  • Make a dressing by whisking together 2 tablespoons of raspberry vinegar, 2 and ½ tablespoons of raspberry jam and 1/3 cup of vegetable oil.
  •  Now tear 8 cups of spinach into bite size pieces, quarter 8 strawberries and cut 2 peeled kiwis into thick slices.
  •  Toss the spinach and fruits with the dressing and toasted, slivered almonds or nuts of your choice.
  • Serve chilled with a dollop of yoghurt or whipped cream on top.

How to Make:

  • Combine 5 cups torn or shredded of Boston lettuce, 3 kiwi fruits, peeled and sliced and ¼ cup of chopped, toasted pecans.
  • To make the dressing, combine 1 tablespoons of yogurt (vanilla flavored, if available), 1/2 teaspoon of vanilla extract (skip if yogurt is flavored), 2 tablespoons of lemon juice, 1 tablespoon of olive oil and 1 tablespoon of honey.
  • Toss the fruits and leaves together with the dressing.
  • Serve immediately for a fresh, replenishing snack.

How to Make:

  • Make a vinaigrette by whisking 2 tablespoons of lime juice, 1 tablespoon of canola oil, 2 teaspoons of rice vinegar, 1 tablespoon finely minced shallot, 1 teaspoon of honey, a pinch of salt and cayenne pepper to taste.
  • Prepare the kiwi fruits by peeling and dicing 4 of the kiwis.
  • Add 2 firm, ripe bananas, cut into coins or diagonal slices to the kiwis.
