  1. Add water to a large pan and allow it to come to boil.
  2. Reduce the heat to medium, add ingredients 1 through 11.
  3. Increase the heat. Once the soup comes to a boil, lower the flame to low to medium.
  4. Cover and let it simmer for 40 to 45 minutes.
  5. Allow it to cool down. Transfer to a blender, and blend to a smooth paste.
  6. In a small pan, add clarified butter.
  7. Once it turns hot, add cumin seeds and allow to splutter.
  8. Transfer blended puree to a container, add salt to taste and season with black pepper.
  9. Pour the tempered cumin seeds over the mixture.

  4. Add corn flour coated roots and shallow fry them until golden brown.
  5. Transfer to a napkin-lined plate so drain excess oil, if any.
  6. In a sauce pan, add the ingredients of sauce and simmer for 5 minutes.
  7. Transfer the fried roots to a wide bowl, pour the sauce, and toss.

4. Burdock Root Rolls:

This recipe is a delicious twist on the classic Indian rolls made with Indian spices.

For the Rolls:

  1. Whole wheat flour – 1 cup
  2. Water – enough for making the dough
  3. Potato – 3, medium sized, cut into ½ inch cubes
  4. Burdock root – 1, cut into 1-inch fine strips
  5. Coriander powder – 1 tsp
  6. Red chili powder – 1 tsp
  7. Chaat masala – ½ tsp
  8. Onion – 1, finely chopped

For the Spread:

  1. Coriander leaves – 2 tbsp, finely chopped
  2. Mint leaves – 4 tbsp, finely chopped

  5. Garlic – 1 clove, finely minced
  6. Salt – to taste

How to Make:

  1. Prepare the dough by kneading whole wheat flour with water and salt to taste. The dough should be non-sticky. Cover with a cloth and keep aside.
  2. Clean potatoes, remove the peel, cut into cubes, and cook until done.
  3. Meanwhile, soak the root strips, drain off excess water, and stir until done.
  4. Take out the cooked potatoes, mash well without lumps, and keep aside
  5. Add oil in a frying pan placed on medium heat.
  6. Add chopped onions and fry until golden brown.
  7. Add sautéed roots followed by mashed potatoes.
  8. Add coriander powder, red chili powder, chaat masala, and salt.
  9. Mix well for even flavoring.
  10. Add a little coriander leaves, remove from fire, and keep aside on a clean, dry plate.
  11. Meanwhile, add all the ingredients mentioned under the spread in a blender and blend to a smooth paste with very little water.
  12. Make about 10 balls from the dough.
  13. Roll out the balls into an 1.5 inch thick flatbread, one after the other
  14. Place on a heated tawa and cook on both sides until brown spots appear. You can apply a little cooking oil too.
  15. Place the flatbread on a clean plate. Add 1 tsp of the mint coriander spread on one end of the roti. Add the potato-root mixture on top of it.
  16. Now start folding from the end where you have kept the filling.
  17. Roll tight until you complete and it looks like a wrap.

Serve hot along with tomato ketchup or mint-coriander chutney.

Tips:

1. You can use wheat tortillas as the base instead of the Indian flatbread.
2. Change the spread according to your palette. A spicy chilly garlic ketchup or pasta sauce could be a wonderful way to add flavor.
