  • Cooking spray
  • 1/3 cup-chopped walnuts
  • 3/4 cup-low-fat buttermilk
  • 1/2 teaspoon-finely grated lemon rind
  • 1/4 teaspoon-ground nutmeg
  • 1/8 teaspoon-ground cloves
  • 2/3 cup-chopped dried figs
  • 1/3 cup-chopped pitted dates
  • 1/2 cup-packed brown sugar
  • 2 tablespoons-canola oil
  • 2 large eggs
Preparation:
  1. Preheat your oven to 350 degrees.
  2. Heat the low-fat buttermilk, lemon rind, nutmeg and cloves in a saucepan over medium heat. Make sure you do not let it boil. Add the figs and dates as you remove the pan from the heat and let it stand while they become soft.

  4. Now add the flour and the egg mixtures together and fold in the chocolate and almonds.
  5. Divide the dough into 3 portions equally and roll each portion to make a 6-inch roll.
  6. Take the rolls and place them 3 inches apart on parchment paper and pat them to make them about 1-inch thick.
  7. Bake at 350 degrees for 28 minutes.
